Chinese Straiits Phillipine

1 lb. river shrimp, chopped fine
1/2 c. bamboo, chopped fine
1 scallion, chopped fine
1 carrot, grated
1 c. cabbage, chopped fine
1 tbl. ginger-garlic mix
4 tbl. light soy
1 pkg. spring or egg roll wrappers
8 egg crepes (optional)
1 beaten egg
  1. Chop shrimp.
  2. Chop bamboo, scallion, carrots, cabbage.
  3. Put all vegetables in bowl, add soy, ginger, garlic and mix well.
  4. Fry shrimp in marinade 5 minutes, cool.
  5. Mix all ingredients together, let stand 15 minutes.
  6. Roll 4 tbl. of vegetable and shrimp mix into wrapper. Seal with egg. Refrigerate 15 minutes, covered, then either deep fry or semi-deep fry in fry pan till crispy.

NOTE:

Egg crepes can be substituted but the fished roll should be steamed and used as a main course.
