1 lb. beef or pork julienned

beef/pork marinade + 1 tsp. sugar - 3 tbl. wine
4 tbl. tree ears
1/2 cup julienned water chestnuts
2 scallions shredded
2 tbl. chopped ginger
1 tsp. chopped garlic

SAUCE:

2 tbl. dark soy sauce
2 tbl. wine
1 tsp. sugar
1 tbl. vinegar
2 tbl. hot bean sauce
1 tbl. sesame oil
3/4 cup broth
  1. Julienne meat and marinate.
  2. Soak tree ears. Chop water chestnuts. Assemble sauce.
  3. Fry meat, add ginger, garlic, scallions for 2 minutes.
  4. Add tree ears, water chestnuts, bean sauce.
  5. Add 4 tbl. broth, mix well.
  6. Add sauce, cover 1 minute. Thicken if necessary.
