1/2 lb. minute steaks
4 bunches fresh watercress
8 water chestnuts cut in 3 slices
SAUCE:
1 tbl. oyster sauce
1/2 tsp. fagara pepper
1 tbl. soy sauce
1/2 tsp. sugar
1/2 cup broth
1 tsp. Szechwan chili paste or Hunan
MARINADE:
5 tbl. garlic oil
3 tbl. black soy
2 tbl. corn starch
1/2 tsp. chopped garlic
1 tsp. chopped ginger
1/2 tsp. fagara pepper
Cut up steak in 3/4" strips and marinate 1/2 hour. Wash watercress then cut in half and drain. Prepare sauce ingredients, set aside with chestnuts. Drain meat and add marinade to sauce ingredients. Deep fry meat in 2 batches. Set aside. Reheat wok. Leave 3 tbl. steak oil and fry 2 minutes. Add beef. Mix well, cover and cook 2 minutes. Thicken and serve.
