1/2 lb. potatoes
1/2 lb. ground pork
1 lb. you choi
2 tbl. light soy
1 c. stock
1 whole scallion, chopped fine

EGG MIXTURE:

1 egg
1 tbl. light soy
1 tbl. wine
2 tbl. corn starch
  1. Peel and boil potatoes. Mash, then set aside to cool.
  2. Mix pork with egg mixture and potatoes. Mix well.
  3. Heat oil for deep frying, about 2 cups.
  4. Get oil hot but not smoking. Form mixture into balls, golf ball size, and deep fry till lightly brown.
  5. Wash greens. Cut in 4-5 pieces.
  6. Put stock, 1 cup + soy sauce, in pot and bring to a boil. Add balls and cover. Cook on low heat 15 minutes.
  7. Fry vegetables. Add to balls. Cover 5 minutes.

OPTION:

Fry balls till brown. Use vegetables as a base. Cover with master sauce and scallions.
