3-4 sweet potatoes, peeled and sliced into silver dollar size 1/2" thick
1-2 c. master sauce
MEAT MIX:
1/2-3/4 lb. ground pork
1 scallion, chopped fine
1 tsp. ginger
1 tsp. garlic, chopped
1/2 tsp. fagara pepper
4 tbl. corn starch
VEGETABLES FOR GARNISH:
Broccoli - Yau Choi Bak Choi
- Combine all ingredients for the meat mix.
- Cut up sweet potatoes, don't wash.
- Make master sauce.
- Heat 2 c. oil and deep fry potatoes 1 minute, drain and cool.
- Spread meat mix over potatoes like shrimp toast and deep fry. Pour master sauce over potatoes and sprinkle with scallions.
Serve with fried snow peas.
