3-4 sweet potatoes, peeled and sliced into silver dollar size 1/2" thick

MEAT MIX:

1/2-3/4 lb. ground pork
1 scallion, chopped fine
1 tsp. ginger
1 tsp. garlic, chopped
1/2 tsp. fagara pepper
4 tbl. corn starch

VEGETABLES FOR GARNISH:

Broccoli - Yau Choi Bak Choi

  1. Combine all ingredients for the meat mix.
  2. Cut up sweet potatoes, don't wash.
  3. Make master sauce.
  4. Heat 2 c. oil and deep fry potatoes 1 minute, drain and cool.
  5. Spread meat mix over potatoes like shrimp toast and deep fry. Pour master sauce over potatoes and sprinkle with scallions.

Serve with fried snow peas.
