1/2 lb. pork cutlets, julienned
5 Italian frying peppers
1 red pepper, julienned
1 scallion, chopped fine
1/2 c. water chestnuts

MEAT SEASONING:

1 tbl. chef chow
2 tbl. hoisin
4 tbl. broth

SAUCE:

3 tbl. oyster sauce
2 tbl. sesame oil
1 1/2 c. broth
  1. Cut up pork, peppers, and scallions. Set aside.
  2. Assemble meat seasoning and sauce.
  3. Assemble water chestnuts, cut up if whole.
  4. Fry pork 1 minute, add meat seasoning. Mix well. Set aside.
  5. Add 2 tbl. oil to peppers. Mix well, then fry 1/2 minute covered, medium heat.
  6. Add meat and water chestnuts. Mix well, then add sauce. Thicken. Add scallions. Serve over rice or rice noodles.
