Food cooked in this style is first steamed, then dipped in a five-spice, corn starch, Szechuan peppercorns and deep fried. These are served with fried salt and pepper. Five-spice, a tricky spice, must be used very carefully as not to overpower the dish.

Also, Double Fry Shrimp which are deep fried in a very thin batter, then pan fried in broth, soy sauce, garlic and vinegar until the shrimp absorb all the sauce. New methods, are not always easy to try or accept but should be taken into consideration when trying to expand further into Chinese cooking.

Another style is Crystal Boiling, where the item is put into broth, brought to a boil for five minutes, then set off the heat until cool.
