2 c. dark soy
2 c. water
1/4 c. wine
1/4 c. sugar
4 cloves garlic or 2 tbl. minced garlic
3 whole star anise or 1 tsp. 5 spice
3 slices ginger, chopped fine
4 dried chilli peppers
1/4 tsp. corn oil
  1. Bring all ingredients to the hard boil then lower gas to a simmer. Simmer 10 minutes till ready.
  2. USES: soy chicken, soy eggs, soy tofu, soy beef (shin). Immerse the ingredients in the sauce, cover, cook 1-2 hours, turning every 15 minutes.

Makes 5 cups.
