(PURE SZECHUAN)
PER 1 LB. MEAT (Usually fried chicken pieces):
4 tsp. finely chopped ginger
3 tbl. finely chopped scallion
4 tsp. finely chopped garlic
6 tbl. sesame oil
2 tbl. soy
2 tbl. chilli oil
4 tsp. rice vinegar
2 tsp. (level) sugar
1 tsp. fagara
IF USING CHICKEN:
Dip chicken in mixture of 1 egg beaten and 6 tbl. water. Then dip in corn starch and either deep fry or pan fry with extra oil.
IF USING BEEF:
Marinate beef then deep fry till crispy. Mix sauce well and pour over meats. Serve at room temperature.
