1/2 lb. Chinese sausage, sliced
1 lb. Idaho potatoes, cut in 1/2 slices
3 chili peppers, seeded (sweet or hot)
1 small onion, sliced thin
1/4 c. green peas

SAUCE:

2 tbl. soy
1 tbl. sesame oil
1 tbl. oyster sauce
1 tsp. vinegar
1/3 c. broth
  1. Slice sausage and fry till translucent. Drain, let stand.
  2. Cut potatoes down the center and slice.
  3. Assemble sauce ingredients.
  4. Heat wok, add sausage and chilies. Mix well, then add potatoes. Mix well. Add 3 tbl. water. Cover, lower heat. Cook 20 minutes then add onions, sauce and peas. Cover, cook 1/2 hour. Thicken if necessary or add more broth if necessary.
