1/2 lb. Chinese sausage, sliced
1 lb. Idaho potatoes, cut in 1/2 slices
3 chili peppers, seeded (sweet or hot)
1 small onion, sliced thin
1/4 c. green peas
SAUCE:
2 tbl. soy
1 tbl. sesame oil
1 tbl. oyster sauce
1 tsp. vinegar
1/3 c. broth
- Slice sausage and fry till translucent. Drain, let stand.
- Cut potatoes down the center and slice.
- Assemble sauce ingredients.
- Heat wok, add sausage and chilies. Mix well, then add potatoes. Mix well. Add 3 tbl. water. Cover, lower heat. Cook 20 minutes then add onions, sauce and peas. Cover, cook 1/2 hour. Thicken if necessary or add more broth if necessary.
