1 large eggplant
1 1/2 c. flour + 1 c. corn starch
4 beaten eggs
8 slices beef steaks
Corn starch for meat dip
1 lb. mixed vegetables and/or rice
SAUCE:
4 tbl. hoisin sauce
2 tbl. sesame oil
1 tbl. oyster sauce
3 tbl. dark soy
1 1/2 c. broth
- Cut eggplant in half then in 1/4" slices.
- Beat eggs. Dip in eggplant then in flour mix.
- Semi deep fry eggplant till crispy. Set aside.
- Assemble sauce. Heat sauce separately. Set aside.
- Marinate steaks, dip in egg lightly then in corn starch then deep fry till crispy.
- Stir fry vegetables. Use as a bed. Alternate meat, eggplant. Pour thickened sauce over. Sprinkle scallions if available.
