1 large eggplant
1 1/2 c. flour + 1 c. corn starch
4 beaten eggs
8 slices beef steaks
Corn starch for meat dip
1 lb. mixed vegetables and/or rice

SAUCE:

4 tbl. hoisin sauce
2 tbl. sesame oil
1 tbl. oyster sauce
3 tbl. dark soy
1 1/2 c. broth
  1. Cut eggplant in half then in 1/4" slices.
  2. Beat eggs. Dip in eggplant then in flour mix.
  3. Semi deep fry eggplant till crispy. Set aside.
  4. Assemble sauce. Heat sauce separately. Set aside.
  5. Marinate steaks, dip in egg lightly then in corn starch then deep fry till crispy.
  6. Stir fry vegetables. Use as a bed. Alternate meat, eggplant. Pour thickened sauce over. Sprinkle scallions if available.
