3 fresh hard tofu or 1 pkg.
triangle bean curd (cooked)
1 c. ground meat or shrimp
1 c. finely chopped bak choi
1 scallion chopped fine
corn starch paste} (tapioca starch only)
1 1/2 c. master sauce
  1. Cut tofu in half lengthwise then in triangle (4 pcs. each tofu).
  2. Fry meat and cabbage and scallions (fine as possible).
  3. Thicken with 1 tsp. corn starch (tapioca).
  4. Let cool then make a sandwich of each 2 peaces.
  5. Heat wok and fry 2 peaces at a time.
  6. Transfer to plate when all are done.
  7. Put plate on steam tray and steam 15 minutes.
  8. Pour master sauce over tofu.

NOTE: Can be made plain.
