3 fresh hard tofu or 1 pkg.
triangle bean curd (cooked)
1 c. ground meat or shrimp
1 c. finely chopped bak choi
1 scallion chopped fine
3/4 c. master sauce
corn starch paste} (tapioca starch only)
1 1/2 c. master sauce
- Cut tofu in half lengthwise then in triangle (4 pcs. each tofu).
- Fry meat and cabbage and scallions (fine as possible).
- Thicken with 1 tsp. corn starch (tapioca).
- Let cool then make a sandwich of each 2 peaces.
- Heat wok and fry 2 peaces at a time.
- Transfer to plate when all are done.
- Put plate on steam tray and steam 15 minutes.
- Pour master sauce over tofu.
NOTE: Can be made plain.
