4 medium white Chinese radishes

1 scallion, chopped fine
2 tsp. salt
1/2 lb. river shrimp
1 6" pc. agar-agar
  1. Slice radishes then chop fine. Use food processor or chopper to puree. Set aside.
  2. Boil river shrimp then chop fine.
  3. Put agar-agar (gelatin) in 6 tbl. water till it dissolves. Let it cool. Mix with scallions and shrimp. Mix well.
  4. Blend all ingredients and puree.
  5. Put in square aluminum tray at least 2" deep. Refrigerate.
  6. Slice then pan fry.
