4 medium white Chinese radishes
1 scallion, chopped fine
2 tsp. salt
1/2 lb. river shrimp
1 6" pc. agar-agar
- Slice radishes then chop fine. Use food processor or chopper to puree. Set aside.
- Boil river shrimp then chop fine.
- Put agar-agar (gelatin) in 6 tbl. water till it dissolves. Let it cool. Mix with scallions and shrimp. Mix well.
- Blend all ingredients and puree.
- Put in square aluminum tray at least 2" deep. Refrigerate.
- Slice then pan fry.
