1 lb. tomatoes

1/4 lb. ground pork
1 tbl. ketchup
1 tsp. sugar
1 tsp. Szechwan bean sauce
(hot or sweet)
1 tsp. salt (l.s.)
Corn starch for dusting
  1. Soak tomatoes in boiling water 30 seconds, then peel the skins, then cut in slices. Sprinkle on corn starch, set aside.
  2. Stir fry ground pork, add ketchup, sugar, bean sauce, and salt, mix well, add 4 - 5 tbl. water for a little sauce. Set aside.
  3. Pan fry 1 layer of tomatoes at a time till done.
  4. Transfer tomatoes to platter, cover with meat sauce.

NOTE:

In Shanghai - finished dish is put in soup bowls with added broth and scallions.
