These were my Grandma's signature cookies. The prune and apricot squares were my favorites as a kid. The original recipe my Mom gave me is at the bottom, but it's too sketchy to actually follow.
Cream the softened butter and sugar, then add in the flour (sifted) and sour cream. Refridgerate the dough overnight.
For Horns (Ruggelach?):
Preheat the oven to 350 F. Separate the dough into 8 pieces. Thinly roll out one of the pieces in a circle, brush with melted butter. Spread with your topping of choice. Cut the dough in eight wedges (like a pizza pie) and roll each wedge from the edge to the tip. Sprinkle the top with cinnamon and sugar. Place on an ungreased cookie sheet. Repeat with the remaining pieces of dough. Cook for 30 to 45 minutes.
For pillows:
Preheat the oven to 350 F. Thinly roll out the dough and brush with melted butter. Cut the dough into squares*. Place a spoonful of jam in the center of each square and fold the corners of the dough into the center, forming a smaller square. Sprinkle the top with cinnamon and sugar. Place on an ungreased cookie sheet. Cook for 30 to 45 minutes.
* Note that the diagonal of your final cookie will be the length of the side of the square you cut. So for example, if you cut 4" squares, you will have approximately 3" square cookies. The mathematician in me would say that the hypotenuse of the corner you fold over makes the side of the new square, and each edge of the folded corner is half of the side of the original square, so if you start with a x" square, the edge of the new square is √((x/2)2+(x/2)2), which for 4" is √((4/2)2+(4/2)2) = √((2)2+(2)2) = √(4+4) = √8 which is just under 3". The cook in me says that pastry puffs and that's too geeky for the average person. :)
