3 – 3 ½ c flour
1 t baking powder
1 t baking soda
5 eggs
6 T oil

12 oz honey (1-1/2 cups)
¾ c brown sugar
½ t ginger, optional
½ t nutmeg, optional

Combine the first 5 ingredients into a soft dough. Knead until smooth. Roll between lightly floured hands into strips, cutting into pieces approx. ¾” x ¾”. Place on baking sheets (or greased cookie sheet) on cookie sheet. Bake in 350 degree oven about 20 minutes until delicately browned.

Combine next four ingredients in a pan. Bring to a boil and cook over low heat for 10 minutes. (It will rise.) Add the baked pastries, cherries, and filberts. Stir constantly until everything is coated with honey (about 5 minutes).

Wet a board with cold water and pour the mixture onto it. Cool slightly and will be able to spoon on paper plates before it hardens or can let it harden and slice.

(I spoon it right from the pot into disposable aluminum pans and let it harden that way.)
