1/2 lb. sirloin tips cut in 1 to 1-1/2 inch cubes (marinate in dark soy)
1 tsp. curry (Madras/Thailand)
1/2 c. corn starch paste
1/2 tsp. salt and sugar mixed
1/2 c. pineapple cubes
6 bamboo or steel skewers
SAUCE:
1 tbl. oyster sauce
1 tsp. sugar
1 tsp. soy
1/3 c. broth
1/4 c. pineapple juice
PROCEDURE:
Marinate beef in dark soy for 1/2 hour and drain. Mix curry and corn starch together. Mix well, add sugar and salt. Dry pineapple cubes well and roll in corn starch mix and set aside.
COOKING PROCEDURE:
Heat oil very hot. Roll beef in curried stock. Cook 1/2 minute. Take out to cool. Put steaks and pineapples on skewers and fry in deep oil.
