6 eggs beaten
1 tsp. salt
+ 1 tbl. light soy
1/2 c. broth
2 tbl. garlic oil
1 scallion chopped fine
1 tsp. chopped ginger
1 c. ground pork
1 c. river shrimp
1/2 tsp. tapioca starch
  1. Beat eggs, add salt, wine, broth, mix well.
  2. Fry pork, shrimp 5 minutes, cool. Cut up scallions then mix with meat, add soy.
  3. Pour meat mix in beaten eggs, mix well.
  4. Pour into bowl, put in wok on a rack (boiling water).
  5. Cover 20-25 minutes.
  6. Will come out firm like a rich custard.
