1 lb. top round beef, julienned (1" strips)

1 red pepper
1 green pepper
2 c. bak choi
8-10 whole snow peas

MARINADE MIX:

1 tbl. Indian curry (optional)
3 tbl. tapioca starch
2 egg whites
beef/pork marinade + 2 tbl. dark soy

GRAVY SAUCE:

1 tbl. oyster sauce
1 tbl. sesame oil
1 tsp. sweet bean sauce
3/4 c. broth + corn starch paste
  1. Mix beef in marinade mix and semi deep fry 1 minute. (Semi = 1 cup oil not to deep.) Cut up vegetables, mix together, sprinkle 1 tbl. oil-water on them, mix.
  2. Mix gravy sauce.
  3. Fry vegetables 1 minute, then cover 1 minute. Set aside.
  4. Refry beef. Add vegetables, mix well. Add gravy, cover 1 minute. Thicken if necessary.

Serve with pan fried noodles.
