1/2 lb. minute steaks, cut in 1/4" strips and marinated,

Add 1 egg white and 1 tsp. corn starch to marinade and mix well.
1/2 c. bamboo shoots or 2 tbl. tree ears
2 fresh chili peppers or 3 large Italian frying peppers and increase chili oil by 1 tsp.

SEASONING:

1 scallion, chopped fine
2 tsp. chopped garlic
2 tsp. chopped ginger
1 tsp. corn starch
+ 2 tsp. water
1 tbl. wine
2 tsp. soy
1 tsp. vinegar
1 tsp. chili oil
1/2 tsp. fagara pepper
1 tsp. sugar

Mix egg white, corn starch, and water together then add to marinade. Cut up steak into strips and marinade 15 minutes. Mix all seasonings in a bowl, set aside. Cut up peppers and bamboo shoots or tree ears and set aside. Stir fry beef 1 minute. Set aside then add peppers, bamboo shoots or tree ears. Add beef to vegetables. Add seasonings and mix well over medium heat. Serve with pan noodles.
