1 lb. sirloin or rib steak tails ¾" thick

1 tbl. dark soy
1 tbl. ginger juice
½ tsp. sugar
1 tbl. wine
3 tbl. oyster sauce
¾ c. broth
1 c. cornstarch - for rolling
½ lb. snow peas

Cut up steak in cubes. Marinate beef 30 minutes. Add 1 tbl. cornstarch. After 30 minutes, take steak out of marinade and roll in cornstarch paste. Heat 2 ½ cups oil and deep fry steak cubes 1 minute. Stir fry snow peas 2 minutes, add cubes and broth. Thicken with cornstarch. Serve with rice.
