baby chicken legs or chicken breasts halved can be used
12 wings detipped and halved
15 small black mushrooms or 3 tbl. tree ears
1 medium can bamboo slice
8 tbl soy and garlic oil
1 scallion
2 25¢ piece ginger chopped fine
oil for deep frying
3 cups boiled water
1 tbl wine
1 tsp sugar
PROCEDURE
Cut off the tips of the wings. Place in bowl with soy/oil for 10 minutes. Deep fry wings till brown. Drain and set aside. Soak mushrooms in hot water until soft. Cut the bamboo in thick slices and deep fry 1/2 minutes and set aside. Heat oil and fry scallions and ginger. Add chicken marinade, wine, suar and the 3 cups boiled water. Add wings, mushrooms and bamboo at bottom of fry pan (12") in this order: bamboo, wings, and mushrooms side by side and water and cook 20 minutes until sauce is reduced to 1 cup. Add cornstarch paste until thickened. Slash on hot oil and serve.
