1 whole chicken breast, julienned
8 dried mushrooms, soaked, sliced
2 scallions, sliced 1" pcs. and mixed with 1 tbl. sesame oil
1 tbl. oyster sauce
2 tbl. light soy
1/3 c. finely chopped ginger
1/2 red pepper

SAUCE:

2 c. broth
1 tsp. sugar
1 tbl. soy
1 tbl. fish sauce (optional)
1 tbl. oyster sauce
1 tbl. rice vinegar
  1. Cut up and marinate chicken, add sauce.
  2. Chop ginger, slice pepper, soak mushrooms.
  3. Assemble sauce ingredients.
  4. Fry chicken. Add ginger, peppers, and scallions. Fry chicken 2 minutes. Cover 1/2 minute, then add sauce. Cover 1 minute. Thicken slightly.
  5. Serve with noodles and broccoli mixed.
