2 chicken breasts, cut in 1" strips (1"x2")
2 c. bread crumbs
1 c. tapioca starch
2 beaten eggs
3-4 c. bak choi
10-12 whole snow peas
1/2 red pepper
4-5 black mushrooms
1 1/2 c. master sauce
  1. Marinate chicken in chunks.
  2. Put crumbs, tapioca starch, and eggs in separate bowls.
  3. Cut up bak choi. String snow peas. Cut up peppers.
  4. Prepare sauce, thickener, and mushrooms.
  5. Marinate chicken then dip in corn starch, in eggs, and then in bread crumbs.
  6. Deep fry till lightly brown. Set aside.
  7. Stir fry bak choi, snow peas, mushrooms, and peppers.
  8. Divide vegetables, meat in 2 portions and cook separately. Thicken if necessary. Serve.
