2 chicken breasts, cut in 1" strips (1"x2")
2 c. bread crumbs
1 c. tapioca starch
2 beaten eggs
3-4 c. bak choi
10-12 whole snow peas
1/2 red pepper
4-5 black mushrooms
1 1/2 c. master sauce
- Marinate chicken in chunks.
- Put crumbs, tapioca starch, and eggs in separate bowls.
- Cut up bak choi. String snow peas. Cut up peppers.
- Prepare sauce, thickener, and mushrooms.
- Marinate chicken then dip in corn starch, in eggs, and then in bread crumbs.
- Deep fry till lightly brown. Set aside.
- Stir fry bak choi, snow peas, mushrooms, and peppers.
- Divide vegetables, meat in 2 portions and cook separately. Thicken if necessary. Serve.
