6-8 pieces thighs & legs
10 Taiwan black mushrooms
2 c. snow peas
6 tbl. sweet scallion oil
1/2 c. water chestnuts
1 c. broth + 6 tbl.
- Marinate chicken 15 minutes (scallion oil).
- Soak, then cut up mushrooms.
- Sprinkle some water on snow peas. Mix well.
- Dice water chestnuts if whole. If sliced, used as is.
5. Stir fry chicken in scallion oil till lightly brown.
6. Add mushrooms + 6 tbl. broth. Cover, cook 15 minutes.
7. Add water chestnuts then add whole snow peas, 1 cup broth. Cover, cook 5 minutes.
