6-8 pieces thighs & legs
10 Taiwan black mushrooms
2 c. snow peas
6 tbl. sweet scallion oil
1/2 c. water chestnuts
1 c. broth + 6 tbl.
  1. Marinate chicken 15 minutes (scallion oil).
  2. Soak, then cut up mushrooms.
  3. Sprinkle some water on snow peas. Mix well.
  4. Dice water chestnuts if whole. If sliced, used as is.

5. Stir fry chicken in scallion oil till lightly brown.

6. Add mushrooms + 6 tbl. broth. Cover, cook 15 minutes.

7. Add water chestnuts then add whole snow peas, 1 cup broth. Cover, cook 5 minutes.
