1 whole chicken, cut 1" cubes
4 green Italian peppers, each 12 pcs.
1 tbl. raw cashews, optional
SAUCE:
1/2 c. broth
2 tsp. wine
1/2 tsp. salt
1/2 tsp. sugar
1 tsp. light soy
1 tsp. water
1/2 tsp. sesame oil
MARINADE:
4 tbl. garlic oil
1 tsp. soy
1 tsp. water
1/2 tsp. garlic, chopped
Cut up and marinate chicken 1/2 hour. Mix well. Cut up peppers and mix sauce ingredients. Set aside. Warm wok and add chicken and marinade. Stir till white, 30 seconds. Set aside. Fry peppers 1 minute. Add 1 tbl. oil to marinade oil in wok. Set aside. Add sauce to wok. Heat then add chicken and peppers. Cover 1 minute. Thicken and serve.
