12-18 pieces chicken wings,
cut in two (no tips)
8 pieces ginger,
25¢ size chopped fine
2 whole scallions chopped fine
8-10 formosa black mushrooms soaked, julienned
  1. Heat 2 cups oil in wok or pot with basket.
  2. Deep fry wings in two batches 5 minutes. Set aside.
  3. Assemble master sauce. Chop ginger and scallions.
  4. Soak and chop mushrooms.
  5. Heat wok, add oil then wings, mix well. Then add ginger and scallions and mushrooms, mix well. Then add master sauce, cover cook 5-10 minutes, thicken. Serve with pan fried noodles and scallions.
