1 chicken breast julienned
1 sui gwa melon cubed
10-12 whole snow peas
1/2 red frying pepper sliced
1/2 cup broth
1/2 corn starch paste recipe

SAUCE:

2 tbl. Hunan chili sauce
2 tbl. light soy
1 tbl. sesame oil
  1. Slice and marinate chicken.
  2. Peel and slice or cube sui gwa melon (fuzzy melon). This vegetable must be peeled like an orange (circular).
  3. Slice peppers - string peas. Put both in bowl, add 2 tbls. garlic oil, 2 tbl. water, mix well.
  4. Fry peppers - peas, covered 1/2 minute. Set aside.
  5. Stir fry chicken, then add sauce, mix well. Then add peppers and peas mix well. Add broth cover 1 minute, thicken if necessary.
  6. Serve with emerald rice.
