1 chicken breast, cubed 1" pcs. and marinated 1 hour
4-6 water chestnuts
1 whole scallion, cut 1" pcs. diagonally
1 tbl. fine chopped ginger
1 tbl. fine chopped garlic
1 tbl. hot bean sauce
MARINADE:
3 tbl. garlic oil
1 tbl. wine
1 tbl. soy
1 tbl. water
1/2 tsp. chopped
garlic or flakes
SEASONINGS:
2 tsp. corn starch paste
2 tbl. broth or water
1 tbl. soy
1 tsp. sugar
1 tsp. vinegar
2 tsp. sesame oil
1 tbl. ground Szechwan pepper
1/2 tsp. salt
Mix seasonings and set aside. Marinate chicken, keep in cool spot. Heat wok and 1/4 cup oil till warm. Add chicken and cook 30 seconds and set aside. Take half oil out, raise heat. Add scallions, garlic, ginger, and bean sauce. Add chicken and water chestnuts to vegetables and mix well. Cook 2 minutes and add seasonings. Cook till sauce thickens and serve.
