1 chicken, cut up in 8 pcs.
1 recipe shrimp/chicken marinade
+ 6-8 pcs. fresh ginger
12 pcs. Chinese dried mushrooms
1 can Taiwan corn
2 c. master sauce
1/2 lb. snow peas + 2 red peppers
- Cut up and marinate chicken. Put on platter and steam 25 minutes.
- String peas, put in bowl, sprinkle 4 tbl. water and 2 tbl. oil. Mix well.
- Soak mushrooms. Destem when soft. Discard stems.
- Cut corns in half. Make master sauce and corn starch paste.
- When chicken is done, cool. Stir fry with ginger till brown. Set aside.
- Stir fry corn, snow peas. Add 3 tbl. water, cover 1/2 minute. Then add mushrooms. Cook 2 minutes, add chicken and master sauce. Cover, cook 5 minutes. Thicken. Serve with rice.
NOTE: Chicken wings can be used only eliminate the steaming.
