2 pkgs. duck legs-thighs, cut in 4 pcs.
3 sweet potatoes, cut in 1/4" slices
1 red pepper, julienne
1 lb. yar choi (green vegetable), cut in 2" slices
1 fuzzy melon, diced
1 1/2 c. broth
SAUCE:
1 tbl. Szech sauce
1 tbl. hoisin or sweet bean sauce
1 tbl. vinegar
- Cut up duck and marinate, put on plate and steam for 20 minutes, cool. Set aside.
- Cut up potatoes and vegetables and set aside. Assemble sauce.
- After duck is steamed stir fry until brown. Add sauce ingredients plus 3 tbl. broth for juice.
- Add all vegetables except greens and mix well. Add broth, thicken. Set aside.
- Stir fry vegetables 1 minute. Cover 1 minute. Transfer to platter and cover with duck.
