2 pkgs. duck legs-thighs, cut in 4 pcs.
3 sweet potatoes, cut in 1/4" slices
1 red pepper, julienne
1 lb. yar choi (green vegetable), cut in 2" slices
1 fuzzy melon, diced
1 1/2 c. broth

SAUCE:

1 tbl. Szech sauce
1 tbl. hoisin or sweet bean sauce
1 tbl. vinegar
  1. Cut up duck and marinate, put on plate and steam for 20 minutes, cool. Set aside.
  2. Cut up potatoes and vegetables and set aside. Assemble sauce.
  3. After duck is steamed stir fry until brown. Add sauce ingredients plus 3 tbl. broth for juice.
  4. Add all vegetables except greens and mix well. Add broth, thicken. Set aside.
  5. Stir fry vegetables 1 minute. Cover 1 minute. Transfer to platter and cover with duck.
