8 pcs. duck legs/thighs (4)
6 tsp. powdered garlic
  + 4 tbl. garlic oil
2 tbl. Chinese black beans
1 green pepper

SAUCE:

2 c. orange juice
1/4 c. vinegar
1/4 c. sugar
1 tbl. light soy
Ketchup (optional)
  1. Cut duck parts in two pieces.
  2. Put on platter or steam tray. Sprinkle with garlic oil and black beans. Cover, steam 40 minutes, cool.
  3. Assemble sauce ingredients. Cut up peppers.
  4. When cool, stir fry 1/2 parts at a time till all are done then put all in wok. Pour over sauce. Cover 5 minutes then add peppers 1 minute. Thicken, serve.
