8 pcs. duck legs/thighs (4)
6 tsp. powdered garlic
+ 4 tbl. garlic oil
2 tbl. Chinese black beans
1 green pepper
SAUCE:
2 c. orange juice
1/4 c. vinegar
1/4 c. sugar
1 tbl. light soy
Ketchup (optional)
- Cut duck parts in two pieces.
- Put on platter or steam tray. Sprinkle with garlic oil and black beans. Cover, steam 40 minutes, cool.
- Assemble sauce ingredients. Cut up peppers.
- When cool, stir fry 1/2 parts at a time till all are done then put all in wok. Pour over sauce. Cover 5 minutes then add peppers 1 minute. Thicken, serve.
