1 3-4 lb. frozen duck (cavity cleaned)
1/2 cup soy sauce
1/4 cup wine
1 onion chopped
1 clove garlic chopped
2 tbl. corn syrup
Water to cover
OPTIONAL GLAZE:
1 tsp. Chinese red
2 tbl. corn syrup
1 tbl. soy sauce
1/4 cup water
Mix all well and can be brushed on in last 15 minutes.
Boil water in oval pot large enough to fit duck and cover with the water. Boil water till hot then add duck for 3 minutes then remove and dry thourghly. Remove all fat from the neck and rear cavity, add chopped onion and garlic to cavity and brush on the soy and wine very good. Preheat the oven to 450¡ then add the duck on a rack with water and roast for 15 minutes at 400¡ or 1 hour at 325¡. Make sure you keep basting then use optional sauce to color top of duck.
