3 Chinese sweet sausage
1/2 lb. med or river shrimp
1/2 chicken or turkey breast
1/4 cup raw cashews
1 cup shredded bamboo
1 scallion chopped fine
SAUCE:
1 tbl. Hunan sauce
1 tbl. hoisin sauce
2 tbl. sesame oil
3/4 cup broth + 2 tbl. dark soy
1 tsp. corn starch paste
- Cut up and marinate all meats together.
- Fry cashews till brown, set aside.
- Assemble sauce.
- Fry all meats, add cashews and sauce. Cook 5 minutes.
- Cook 1/2 lb. lo mien noodles, marinate, let stand 1 hour. Then heat fry pan, add noodles forming pancake the size of pan. Brown on both sides, watch you don't burn.
- Put on platter, cut in 4 pieces. Serve, pour meat mix over. Sprinkle on scallions.
