4 hard bean cakes
1/2 lb. or 2 pork chops
1/3 c. scallions
4 chili peppers (sweet or hot)
or 1 medium Italian pepper
SAUCE:
1 tbl. dark soy
2 tbl. sweet puree bean sauce
1/2 tsp. (l.s.) salt
1 tbl. sesame oil
1 tbl. ginger wine
1/2 tsp. black beans (optional)
- Cut bean cake into three layers then cut into two triangles.
- Cut up pork into thin slices. Cut up scallions and peppers in small pieces. If using black beans, crush.
- Heat 1 1/2 - 2 cups oil and deep fry bean cakes till brown. Set aside.
- Stir fry pork, add scallion and peppers. Cook 2 minutes, then add sauce ingredients. Cover, cook 2 minutes.
- Add black beans if using them, then add bean cake slices. Mix well. Thicken if necessary.
