1. Rib 2" of top removed.
  2. Cut ribs separate. Then chop each piece in 3.
  3. Marinate in beef/pork marinade} + 2 tsp. sesame oil.
3 tbl. mash black bean Hunan paste
1/4 c. broth
1 scallion chopped fine
1 tbl. chopped ginger

COOKING:

  1. Marinate ribs 1-2 hours, add bean paste mix well.
  2. Assemble broth.
  3. Chop scallions - ginger.
  4. Fry ribs - bean paste 2 min., add ginger, mix well.
  5. Add broth, cover, cook 1/2 hour.
  6. Take off cover - cook 1/2 hour till thick, mix in scallions.

HUNAN BEAN PASTE:

Small pkg. fermented black beans, mashed.
2 tbl. sesame oil.
2 tbl. dark soy
1 tbl. chef chow chili or 1 tbl. (level) chili pepper

Mix all well into a paste. Store indefinitely in container.
