Have butcher cut ribs across the length into 1 inch pieces. Put cut up ribs into cold water plus 2 tbl. vinegar. When the water boils skim the water till clear, lower gas. Cooking 30 minutes. Drain and cool.
SAUCE:
3 tbl. sugar
3 tbl. vinegar
3 tbl. ketchup
1 tbl. ginger wine
1/2 scallion
Heat wok and pan fry ribs. Add 2 tbl. soy sauce, 1 tbl. ginger wine. Cover and cook 2 minutes. Add sauce.
