1 rib cut up Chinese style
and marinated
1 tbl. chopped scallions (1/2)
1 tsp. salt + 2 tsp. sugar
4 tbl. light soy
1 small onion chopped fine
4 tbl. apple juice
4 tbl. orange juice
4 tbl. pineapple juice
2 tbl. tomato paste
1/2 cup broth
3 tbl. ginger wine
- Cut ribs in half or thirds Chinese style and mix with scallions, salt, sugar, soy; mix well. Dust with 1 tbl. corn starch, mix well.
- Heat wok, add ribs mixture and fry gently for 25 minutes or till brown, set aside.
- Heat wok, add 3 tbl. oil then sauce, onions, paste, then add ribs and all the juices and wine. Cover, cook 5 minutes. Thicken if necessary. Serve.
