1 rack ribs, cut Chinese style
4 tbl. fermented black beans, mashed
5 tbl. Szech bean sauce
1 whole scallion, cut 1" pcs.
2 tbl. tomato paste + 3tbl. broth or water
  1. Cut ribs in slices then in 2-3 pieces.
  2. Put ribs on platter. Splash on some garlic oil and the fermented black beans. Steam 25 minutes.
  3. After they are steamed let them stand for 1/2 hour. Heat up wok and stir fry until brown, leave in the black beans. Add balance of ingredients. Mix well and add 1/4 c. broth. Cover, cook over medium heat for 10 minutes. Thicken if necessary. Serve with watercress.

NOTE:

Sweet bean sauce may be substituted for the hot bean sauce.

Tomato sauce may be substituted for tomato paste.
