1 lb. River Shrimp
1 recipe shrimp toast
10-12 Slices Sweet Potatoes 1/2" thick
2 c. master sauce
1 Scallion, julienned
- Cut sweet potatoes. Deep fry 1 minute, set aside.
- Prepare shrimp as for shrimp toast.
- Cover potatoes with mixture, sealing in well. Pan fry face down (shrimp).
- When brown, turn over. Pour on master sauce and cook till dry. Transfer to platter Cover with sauce and scallions.
