1 lb. River Shrimp
1 recipe shrimp toast
10-12 Slices Sweet Potatoes 1/2" thick
1 Scallion, julienned
  1. Cut sweet potatoes. Deep fry 1 minute, set aside.
  2. Prepare shrimp as for shrimp toast.
  3. Cover potatoes with mixture, sealing in well. Pan fry face down (shrimp).
  4. When brown, turn over. Pour on master sauce and cook till dry. Transfer to platter Cover with sauce and scallions.
