4-6 filet of flounder, sole, etc. (boneless)
1/3 tsp. salt or 1 tbl. soy

BATTER:

2 eggs
1/2 c. flour
1/2 c. corn starch
3/4 c. water
1 tsp. baking powder

SAUCE:

1/4 c. lemon juice
5 tsp. sugar
5 tsp. water
3/4 c. broth
  1. Wash filets then marinate 15 minutes, then add wine and soy. Let stand 15 minutes.
  2. Mix batter, let stand 1/2 hour at room temperature. Mix sauce ingredients. Set aside.
  3. Heat 3 cups oil on medium heat, then add battered fish, 2 pieces each till done.
  4. Heat sauce, thicken if necessary. Put a bed of lettuce or cabbage, lay on the fish, then pour the sauce over the fish. Sprinkle with scallions.

OPTIONS:

  1. Omit the batter. Steam the fish 20 minutes. Add sauce to fish last 10 minutes. Sprinkle on scallions.
  2. Mix sauce, omit lemon, add 1 can or 1 cup. crab meat.
  3. Serve over rice.
