1 lb. 25-31 or 16-20 shrimp
1 recipe for batter #1
1/2 c. red pepper, chopped fine
1/2 c. green pepper, chopped fine
1/2 c. scallions, chopped fine
1/2 c. radish, chopped fine
Oil for deep frying
  1. Butterfly shrimp from underneath and marinate 15 minutes.
  2. Make batter. Let stand 1/2 hour.
  3. Assemble vegetables. Heat oil. Check oil very carefully, not smoking hot.
  4. Put cut up vegetables into batter. Mix very well.
  5. Dip shrimp into vegetable batter. Deep fry or semi deep fry. Semi deep fry in frying pan with 1" oil.
