1 lb. med. shrimp, cleaned and soaked 1/2 hour in cold water
1 red pepper
1/2 cup cashews
2 tbl. tree ears

SAUCE:

2 tbl. chili oil
2 tbl. Szechwan chili sauce
1 whole scallion
1/2 cup broth
  1. Peel shrimp, clean down the back then soak for 1/2 hour.
  2. Fry cashews & peppers together till lightly brown. Set aside.
  3. Stir fry shrimp after a 1/2 hour of marinating.
  4. Add sauce ingredients and mix well. Cook covered 2 minutes over medium heat. Then add cashews, thicken with cornstarch paste if needed.
  5. Serve over vegetable (broccoli).
