1-2 eggplant, 2-3" in diameter
MEAT MIX:
1/2 lb. baby shrimp
1/2 lb. ground pork
3 tbl. corn starch
1 tbl. chopped garlic
1 tbl. ginger
1/2 tsp. fagara pepper
SAUCE:
3 tbl. soy
1 tbl. sweet bean sauce
1 tsp. sugar
1 tsp. hot bean sauce
1 tbl. oyster sauce
3/4 c. broth
- Slice eggplant in to 3/8" slices.
- Assemble sauce ingredients. Set aside.
- Make meat mix. Mix well.
- Dust each piece of eggplant. Add 1/2 of meat mix on eggplant. Cover with a second piece of dusted eggplant to form a sandwich.
- Heat fry pan and fry eggplant till brown on each side.
- Heat pan. Add sauce ingredients and eggplant. Cover, cook 10 minutes. Thicken and serve.
