8-12 Italian frying peppers

1-1 1/2 lbs. filet of fish or crab meat (Japanese) marinated
1 whole scallion chopped fine
2 tbl. ginger-garlic mix
1 tsp. white pepper
2 tbl. sesame oil
2 beaten eggs
2 tbl. tapioca starch

SAUCE:

2 tbl. oyster sauce
2 tsp. sesame oil
3 tbl. dark soy
1-1 1/2 c. broth
  1. Chop fish fine and add shrimp marinade.
  2. Add scallion, ginger-garlic mix, pepper then eggs, watch eggs only till loose, not too loose (mix well).
  3. Clean peppers, dust inside pepper with corn starch
  4. Stuff peppers with fish mixture, seal with eggs and steam on platter 20 minutes.
  5. Assemble sauce ingredients to the boil, put peppers on platter then pour on sauce.

NOTES:

  1. Szech paste may be added to sauce.
  2. Ground turkey may be added to fish.
