Ingredients
2 lbs. sausage cut ¼ in. thick
1 lb. boneless chicken breast (use thigh if you like dark meat chicken)
1 ½ onion, large
1 bell pepper, seeded and diced
4 cloves garlic
5 cups water
3 tablespoons salt (omit for low sodium diets)
½ teaspoon cayenne pepper (add more if you like it HOT!)
3 bay leaves
6 oz. tomato paste
3 cups uncooked rice
Method
- Saute sausage, chicken, onions, bell pepper and garlic until sausage and chicken ar browned. Add the water, salt, cayenne, bay leaf and tomato paste.
- Bring to a boil with the lid on. When water boils add the raw rice.
- Stir and lower fire. Let rice simmer, stirring every five minutes until rice is cooked.
