Ingredients

2 lbs. sausage cut ¼ in. thick

1 lb. boneless chicken breast (use thigh if you like dark meat chicken)
1 ½ onion, large
1 bell pepper, seeded and diced
4 cloves garlic
5 cups water
3 tablespoons salt (omit for low sodium diets)
½ teaspoon cayenne pepper (add more if you like it HOT!)
3 bay leaves
6 oz. tomato paste
3 cups uncooked rice

Method

  1. Saute sausage, chicken, onions, bell pepper and garlic until sausage and chicken ar browned. Add the water, salt, cayenne, bay leaf and tomato paste.
  2. Bring to a boil with the lid on. When water boils add the raw rice.
  3. Stir and lower fire. Let rice simmer, stirring every five minutes until rice is cooked.
