1 tsp ground cumin
1 tsp ground coriander
1 tsp salt or to taste
juice of 2 lemons
freshly ground black pepper
1 tbsp fresh mint and 1 tbsp fresh dill mixed
2 tbsp olive oil
Remove pin bones with a tweezer. Mix cumin, coriander, salt, oil, & 1 tbsp lemon juice. Brush on salmon. Marinate at room temperature for 30 minutes.
Preheat broiler to very hot - at least 10 minutes. Broil salmon 2 - 3 inches from heat for 3 - 5 minutes. until top is browned.
Fish is now slightly undercooked in middle. If you want i more done, turn off broiler and leave in hot oven another 3-5 minutes. Sprinkle with remaining lemon juice, black pepper, and herbs.
