From my mother's recipes.
1 lb rotelle
large red pepper cubed
1 pkg frozen peas
spinach pesto (see below)
Mix together and serve chilled or room temperature
SPINACH PESTO
10 oz pkg frozen spinach, thawed and squeezed
1 cup fresh parsley leaves
2/3 cup grated parmesan cheese
1/2 cup walnut pieces
4 flat anchovy fillets
2 garlic cloves mashed
1 tbsp dried basil
1/4 tsp ground fennel seed
Blend in a food processor until smooth. With motor running add in stream:
1 cup olive oil
