1/2 cup flour
1/2 cup milk
2 eggs, lightly beaten
pinch nutmeg
8 tbsp butter (can use less)
2 tbsp confectioner's sugar
juice of half a lemon
Preheat over to 425 F.
Combine flour, eggs, milk and nutmeg. Beat lightly, leave a little lumpy. Melt butter in a 2" deep skillet. When very hot, pour in batter. Bake in oven for 15 to 20 minutes (until golden brown). Sprinkle with confectioner's sugar and return briefly to the oven. Sprinkle with lemon juice and serve.
