6--8 hard boiled eggs
1/2 c. corn starch
1/2 lb. ground pork
6 water chestnuts, chopped very fine

SAUCE:

2 tbl. oyster sauce
1/2 tsp. sugar
1/2 tsp. sesame oil
1 tsp. dark soy
3/4 c. broth
1 scallion, cut 3/4" pcs.
  1. Roll eggs in corn starch. Set aside.
  2. Mix pork and water chestnuts well.
  3. Mix sauce ingredients. Set aside. Cut scallions.
  4. Wrap pork completely around eggs till covered.
  5. Heat 2 c. oil and deep fry 2-3 eggs at a time till all are done, 10 minutes each. Heat sauce. Pour over eggs. Sprinkle with scallions and serve.
