6--8 hard boiled eggs
1/2 c. corn starch
1/2 lb. ground pork
6 water chestnuts, chopped very fine
SAUCE:
2 tbl. oyster sauce
1/2 tsp. sugar
1/2 tsp. sesame oil
1 tsp. dark soy
3/4 c. broth
1 scallion, cut 3/4" pcs.
- Roll eggs in corn starch. Set aside.
- Mix pork and water chestnuts well.
- Mix sauce ingredients. Set aside. Cut scallions.
- Wrap pork completely around eggs till covered.
- Heat 2 c. oil and deep fry 2-3 eggs at a time till all are done, 10 minutes each. Heat sauce. Pour over eggs. Sprinkle with scallions and serve.
